Fermentation: This lot underwent a one day fermentation in an anaerobic environment. Following this, it underwent an extended fermentation in GrainPro bags at the same temperatures and lastly went back into the initial tanks for another full day. It was then placed on raised beds to dry in whole cherry.
Drying time: 10 days on raised beds under 15-25C
Drying temperature: 28 °C Max. - 15 °C Min.
